Vegetable soup is one of the easiest recipe with many health benefits so why buy a canned soup when you can make this at home. Canned soup also decreases the nutrient values and not many people appreciate the taste as well.
INGREDIENTS :
- Olive oil
- Ginger garlic past (1/2 tsp)
- Onion (1/2 cup)
- Carrots (1/2 cup)
- Cabbage (1/4 cup)
- Celery (1/4 cup)
- Green Beans (8-9)
- Tomato (1/4 cup)
- Salt & Pepper
- Cornflour
- Coriander for garnishing.
METHOD:
- Sauté chopped onion in olive oil
- Add ginger garlic paste
- Add carrots, cabbage, celery, green beans, tomato and seasonal vegetables of your choice
- Add water
- Cook for 5 minutes
- Season with salt, pepper.
- Add cornflour water (3 tbps of corn + 1/2 cup of water)
- Bring to a boil and simmer for 30 minutes or until all vegetables are tender.
- Pour the soup into a bowl and garnish it with coriander
